Sourdough has no conditioners or preservatives to keep it fresh for long periods like store bought bread. In order to preserve its life there are tips and tricks to help restore moisture, softness, or that crispy crust sourdough is known for!
Sourdough Artisan Loaves
STORAGE
1–3 Days:
Store in plastic if you like your crust soft. Store in paper or cloth to keep crusty or if you like to reheat or toast your bread.
3+ Days:
Slice the loaf and freeze in a sealed freezer bag or airtight container. Toast slices directly from frozen.
or
Place whole loaf in freezer and thaw before refreshing in next step.
REFRESHING YOUR LOAF
To Reheat Whole Loaf (for that fresh-baked crust):
- Preheat oven to 425°F
- Lightly spritz or run water over the crust
- Bake for 10 minutes
This method can be used for:
- loaves that have been on the counter or thawed from the freezer.
- Half loaves and slices!
- Loaves that have been left out and are rock hard!
TIPS
- Never refrigerate sourdough—it dries it out!
- For best texture, toast or reheat before serving after the first day.
- Store in a bread box or linen bag for extended freshness.
English Muffins
STORAGE
1–3 Days:
Store in plastic bag or airtight container at room temperature. Reheat or toast before serving for the best texture.
Long-Term:
Slice in half and freeze in a sealed freezer bag or airtight container. Toast straight from frozen—no need to thaw!
REFRESHING / REHEATING
- Split muffin if it is not already.
- Spritz with water if they feel dry.
- Toast!
TIPS
- Sourdough muffins are best toasted before serving.
- Avoid refrigerating—they’ll dry out faster.
- Freezing is the best option for keeping them longer than a few days.
Cinnamon Rolls
Storage
- Fresh: Best enjoyed slightly warm. Pop in the microwave for 10–15 seconds (without the pan) or in the oven (in the pan) at 300°F (150°C) for ~10 minutes.
- 1-3 days: Store at room temp. Reheat gently as above. Do not put in the refrigerator as cold will dry them out!
- 3+ days: Consider freezing if you’d like to save them. Place either the whole pan, or individually wrapped cinnamon rolls in freezer bag.
Reheat/Refresh
- Thaw at room temp and follow heating instructions above.
Pizza Crusts
Baking Instructions
- Preheat oven to 450ºF.
- Build pizza with any toppings desired.
- Place pizza directly on middle rack or stone, or for a softer crust, use a metal pizza pan.
- Bake for ~10 minutes or until cheese is bubbly. You may need more or less time depending on the amount of your toppings.
STORAGE
1–3 Days:
Store in plastic bag or airtight container at room temperature.
Long-Term:
Pizza crusts freeze really well! Bake directly from frozen with same temp and time instructions.
TIPS
- Less is more with toppings. Too many toppings can lead to longer cook times or soggy crust.
- Avoid refrigerating—they’ll dry out faster.
- Freezing is the best option for keeping them longer than a few days.
Sandwich Loaves
STORAGE
1–5 Days:
Store in plastic or airtight container.
REHEAT
- Preheat to 350°F.
- Lightly mist or sprinkle the rolls with a little water, or cover loosely with foil to keep them soft.
- Warm for 5–10 minutes, watch carefully!
- Remove foil for the last 1–2 minutes if you want a lightly crisp top.
Alternatively:
- Place rolls in a paper bag and fold over.
- Place bag in a hot oven that has been turned off.
- Let warm for ~10 minutes or until just warm.
TIPS
- Never refrigerate sourdough—it dries it out!
